Porridge Cake

Everyone dreams of having cake for breakfast. Well, now you can with this brilliant recipe!

This porridge cake recipe is easy to make. The kids will love helping you make this healthy breakfast recipe. We eat this on repeat in our house.

Not only do the kids eat this for breakfast, they also eat is as an after school snack or even in their lunch boxes! It’s packed full of protein and slow release carbs from the oats.

Customise it with whatever you want - fruit, chocolate chips, coconut, choice of nuts and seeds and enjoy!

Porridge Cake

Ingredients

Food you'll need
  • 2 ripe bananas
  • 2 eggs
  • 3 cups of milk choice
  • 1 tsp vanilla extract
  • 3 cups oats
  • 1 tbsp chia seeds
  • 1 cup frozen berries (e.g. raspberries)
  • To serve: crème fraîche and fresh fruit
Take note: Prepare all the night before and store in the fridge

Instructions

Stuff you'll need
  1. Chopping board
  2. child-safe knife
  3. baking dish (10x8" approx.)
  4. small bowl
  5. measuring cups
  6. fork
  7. big bowl
Optional extras
  1. 1 tbsp desiccated coconut
  2. 1 tbsp chopped nuts of choice
  3. 1 tbsp choc chips
  4. 2 tbsp cacao powder (for chocolate porridge cake)
How to make it
  1. Turn on your oven to 180 degrees
  2. Slice the bananas and spread them evenly on the bottom of your baking dish.
  3. In a small bowl, mix the egg, milk and vanilla together (wet ingredients).
  4. In a big bowl, add the oats and chia seeds (dry ingredients) and any optional extras you fancy.
  5. Mix the wet and dry ingredients together. It should be quite runny (add some more milk if it's not).
  6. Pour this over the banana slices, making sure they are completely covered.
  7. Scatter some frozen berries on top.
  8. Bake for 35 - 40 minutes at 180 degrees.
  9. Carefully take it out of the oven and serve straightaway with some crème fraîche and fresh fruit - yum!
