How to make healthier rocky rocky with the kids!

Try this easy, child-friendly recipe for healthy rocky road as an alternative to the standard rocky road recipe.

It uses protein packed puffed quinoa, fresh pomegranate seeds, toasted seeds and dark chocolate for a nutrition-packed snack.

How to make healthier rocky rocky with the kids!

Ingredients

  • seeds of 1 pomegranate
  • cup and half of puffed quinoa
  • ⁠half cup desiccated coconut
  • half cup of sunflower seeds
  • cup or two of dark chocolate chips

Instructions

Top tip - toast your seeds on a dry pan for extra crunch and flavour
  1. Add the seeds, puffed quinoa, toasted seeds and coconut into a large bowl.
  2. Melt the chocolate and add to the bowl.
  3. Mix everything well.
  4. Pop into a lined tin. Press down well with the back of a spoon.
  5. Refrigerate for 2 or more hours.
  6. Slice into squares and enjoy!
Customise your whole food, healthier rocky road. Add any (or all!) of the following wholefoods;
  1. - popcorn (good for imitating marshmallows kinda!)
  2. - ⁠nuts - peanuts, cashews, hazelnuts, pecans …
  3. - ⁠pumpkin seeds, chia seeds
  4. - ⁠dried fruit like goji berries, raisins, chopped dates
  5. - ⁠fresh fruit like blueberries, raspberries (will affect shelf life)
