How to make carrot cake pancakes

Here’s a new take on the traditional pancake recipe. The kids will not believe there are carrots in this pancake!

This recipe was inspired by one from Jamie Oliver.

How to make carrot cake pancakes...

Ingredients

Ingredients
  • 1 cup self-raising flour
  • 1 cup milk of choice
  • 1 egg
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg (optional)
  • 1 tsp vanilla essence
  • 1 carrot - grated
  • Handful of raisins - chopped
  • Small handful walnuts - chopped

Instructions

Here’s kitchen jobs the kids can do when making these carrot cake pancakes:
  1. 1. Measure the flour and milk
  2. 2. ⁠crack the egg
  3. 3. ⁠mix, mix, mix!
  4. 4. ⁠peel the carrot using a safe peeler (add link here)
  5. 5. ⁠add spices
  6. 6. ⁠chop walnuts and raisins (using a safe knife) Add link here please
  7. 7. ⁠mix, mix, mix
  8. 8. ⁠cook the pancakes - from age 8+ approximately but you know your child best
  9. 9. ⁠Eat and enjoy!
How to make carrot cake pancakes...
  1. 1. Pop the flour and milk into a large bowl.
  2. 2. ⁠Crack the egg in and mix everything well
  3. 3. ⁠Add your grated carrot, chopped walnuts and chopped raisins - mix
  4. 4. ⁠Add your spices and give a final mix
  5. 5. ⁠add some butter to a pan and melt gently
  6. 6. ⁠add spoons of the mixture - it will be quite thick
  7. 7. ⁠cook until you can see bubbles appear on the surface of the mixture
  8. 8. ⁠flip - whichever way you can!
  9. 9. ⁠serve with creme fraiche, a little maple syrup and some berries
  10. Yum!
