The Salmon of Knowledge with Cauliflower Rice

This is a simple, quick, healthy family dinner that everyone will love!

Have you ever heard of cauliflower rice before? It’s kinda like rice except it’s made out of cauliflower so it’s not really rice at all!

It’s really quick and easy to cook. You can cook it while the fish is in the oven. If your kids are not cauliflower lovers, you can mix it with normal rice or cous cous until they get used to the taste of the cauliflower rice.

Kitchen jobs the kids can do:

  • help make the marinade

  • pour the marinade over the salmon.

  • scatter the sesame seeds on top of the salmon

  • help prep the cauliflower

  • pop the cauliflower in the blender

  • turn on the blender

  • cook the cauliflower rice (depending on their age)

  • serve up

The Salmon of Knowledge with Cauliflower Rice

Ingredients

Food you
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 inch (3cm) root ginger
  • 2 garlic cloves, peeled
  • 4 fillets salmon
  • 1-2 tbsp sesame seeds
Food you
  • 1 head of cauliflower
  • 1 cup frozen peas
  • olive oil
Stuff you
  • bowl
  • measuring spoons
  • teaspoon
  • grater
  • large knife
  • ovenproof dish
  • chopping board
  • blender
  • frying pan or wok

Instructions

How to make it: Salmon
  1. Put the honey, soy sauce and olive oil in a bowl
  2. Scrape the skin off the ginger with teaspoon and grate (use the smallest hole on your grater)
  3. Chop the top and bottom off the garlic cloves and chop them really small or use a garlic crusher.
  4. Add the ginger and garlic to the bowl and mix well with the other ingredients.
  5. Pop your salmon into an ovenproof dish and pour the sauce over it.
  6. Put it into the fridge for an hour and run outside to play, go to GAA or finish your homework.
  7. Once the hour is up you can turn the oven on to 180 degrees
  8. Sprinkle the sesame seeds on top of the salmon and slide it into the hot oven. While it's cooking (this will take 10 -12 minutes), make the cauliflower rice.
How to make it: Cauliflower rice
  1. Chop the leaves off the cauliflower and break or chop the head into pieces (florets).
  2. Put half the pieces into the blender and blitz until it looks like rice. Empty the blender and then do the other half. You might have to stop and start the blender to move larger pieces of cauliflower around so that it all gets blended nicely.
  3. In a large frying pan or wok, heat some oil on a medium heat.
  4. Tip the 'rice' into the pan and stir gently.
  5. Add the peas and mix well.
  6. Cook for 2-3 minutes. Add some water if it starts to stick - a tablespoon at a time.
  7. Check on the salmon in the oven after 10minutes. To check that it's cooked, cut into the thickest piece to make sure it's light pink al the way through.
  8. When the rice and salmon are cooked, place some of the 'rice' on a plate and top with the lovely salmon.
  9. Sprinkle some extra sesame seeds on top to decorate it. Mmm!
