Easy 3 ingredient store cupboard family dinner

Ingredients

  • 1 jar roasted peppers (do not drain)
  • 1 can chickpeas (drained but save the juice for making mousse etc.!)
  • I pack whole meal pasta
  • Cheese to top (optional)

Instructions

  1. Cook your pasta according to packet instructions.
  2. Dump the whole jar of roasted peppers and the tin of chickpeas into a blender.
  3. Blend until you have a smooth sauce.
  4. Heat your sauce gently on a pan. Season to taste. Add some pasta water if the sauce is getting thick.
  5. Once the pasta is cooked and the sauce is heated all the way through, add your drained pasta to the sauce and mix well.
  6. Serve immediately. Sprinkle with cheese as desired.
