Pancakes Glas Blasta

The kids will love these green pancakes for breakfast, brunch or lunch on St. Patrick’s Day. Make a batch and let them watch how the spinach turns the pancakes green!

Dive into these festive green pancakes before you head out the door to the parade! The kids won’t even realise they are eating spinach, they’ll be so excited by these colourful pancakes.

You can make them for a crowd on St. Patrick’s Day or even make them in advance and bring them into work if you’re celebrating all things Irish!

Pancakes Glas Blasta

Ingredients

Food you'll need
  • 1 cup flour (whole wheat or spelt or whatever you have)
  • 1 cup milk of choice
  • 1 cup spinach leaves
  • 2 eggs
  • 1 tbsp butter, melted
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda (bread soda)
  • olive oil for frying
  • mandarin orange segments and crème fraiche to serve
Stuff you'll need
  • measuring cups and spoons
  • blender
  • frying pan
  • ladle or large spoon
  • plates

Instructions

How to make it
  1. Pop the flour, milk, spinach, eggs, melted butter, baking powder and bicarbonate of soda into a blender and blitz them until you have a smooth, green mixture.
  2. Turn your oven on to a 120 degrees.
  3. Pour some oil onto the frying pan over a medium heat and gently heat it up.
  4. Add a ladle/spoonful of the pancake mixture to the pan and cook for a couple of minutes.
  5. Flip over and cook on the other side. Slide it onto a plate and pop it into your warm oven while you cook the rest.
  6. When all the pancakes are cooked, divide them between three plates. Top them with mandarin orange segments and crème fraiche to look like the Irish flag. Go hálainn!
