Easy Egg and Veggie Wrap

A quick protein and veg loaded wrap that you can make for the kids when they come home - or they can help you with too!.

A perfect, protein packed lunch after a trip to the gym for me too. Inspired by @eastcork_nutrition who has great recipes.

Easy Egg and Veggie Wrap

Ingredients

  • 1 full courgette
  • 2 medium carrots
  • 3 eggs
  • Couple tbsp/parmesan cheese
  • Pepper and seaweed salt

Instructions

  1. Grate the veggies.
  2. Mix with the eggs, seasoning and cheese
  3. Line a flat oven tray with baking paper and spray with oil.
  4. Pop the mixture onto the tray and spread evenly
  5. Bake in a preheated oven (180) for 15-20 mins, until golden on top.
  6. Then fill, roll and eat!
What I did!
  1. I filled it with a mix of tuna and tinned mackerel but other fillings you could use;
  2. - ham and cheese
  3. - chopped chicken
  4. - pesto
  5. - hummus and tomatoes
  6. - just leave it plain
  7. - use it as a sandwich filling
