Easy Egg and Veggie Wrap
A quick protein and veg loaded wrap that you can make for the kids when they come home - or they can help you with too!.
A perfect, protein packed lunch after a trip to the gym for me too. Inspired by @eastcork_nutrition who has great recipes.

Easy Egg and Veggie Wrap
Ingredients
- 1 full courgette
- 2 medium carrots
- 3 eggs
- Couple tbsp/parmesan cheese
- Pepper and seaweed salt
Instructions
- Grate the veggies.
- Mix with the eggs, seasoning and cheese
- Line a flat oven tray with baking paper and spray with oil.
- Pop the mixture onto the tray and spread evenly
- Bake in a preheated oven (180) for 15-20 mins, until golden on top.
- Then fill, roll and eat!
What I did!
- I filled it with a mix of tuna and tinned mackerel but other fillings you could use;
- - ham and cheese
- - chopped chicken
- - pesto
- - hummus and tomatoes
- - just leave it plain
- - use it as a sandwich filling
Feeling stronger already …?!!
I used the following Irish ingredients :
- @ebb_flow_seaweed seaweed salt
- @shinestuna mackerel
- @sussed11 spray oil (#gifted)
- @builin_blasta mayonnaise
